After the initial harvest of cinnamon branches, the outer bark is carefully stripped away to reveal the interior bark which is notably aromatic. The task of peeling the bark is a delicate art that can only be done by hand with the utmost precision, similar to that of sculpting a masterpiece. In Sri Lanka, only a small number of experienced growers possess the talents and techniques required to produce the precious C5 and C5 Alba grade cinnamon.

True cinnamon is derived from the bark of the young shoots of Cinnamomum zeylanicum, which is a large tree of the Lauraceae family. This type of cinnamon must not be interchanged with cassia (Cinnamomum cassia), as it has a less subtle flavour. The difference between the two is visible in their bark: cinnamon presents a thinner bark with a warm yellow-brown hue, and cassia shows a thicker and reddish-brown colour.

C5 Grade Ceylon Cinnamon is considered the finest quality, offering an intense and nuanced flavour. This variety is famously known for containing Cinamic acid, providing an impressive depth and subtlety of taste. True Cinnamon has an unmistakable aroma and flavour; pleasant, warm and intense.

This premium-quality Sri Lankan C5 Cinnamon is incredibly versatile, making it suitable for all types of desserts. We suggest using it to flavour biscuits and cookies, shortbread, fruit compotes, orange slices, apple tarts, fruit crumbles, and chocolate desserts.
